Bake Your Way With Breville (Basic Cake & Stable Frosting Workshop)



I ain't seen myself baking one day, mixing the flour, eggs & etc
 cause i have this perception that Baking is a difficult thing to do.

But a few weeks ago, i was invited to attend a baking workshop sponsored
by Breville held at the WOW Group. I love eating cakes & cupcakes but 
i really don't know how to bake so without any hesitations
i went to the workshop and surprisingly i realized how fun it is to bake.


Before anything else let's have a brief introduction first about Breville.
They started out in 1932 with the aspirations of two young Australian Entrepreneurs.
Why Breville? It is actually from a combination of two names,
Bill O'Brien and Harry Norville.
They have juicers, blenders, espresso maker, kettle, oven, mixer & etc.

BASIC CAKE & STABLE FROSTING WORKSHOP

It is my first time to attend a baking workshop and i really learned a lot from Chef Edward, 
Aside from teaching us how to bake a cake he also properly discussed about the basic problems that you might encounter on frosting.


He used to Breville products for this workshop,
 the Breville Scraper Mixer Pro & Breville Smart Oven

The Breville Scraper Mixer Pro uses 'planetary mixing'  for a superior end result.  360° bowl coverage is achieved by the counter-clockwise motion of the mixer head combined with the clockwise "sweep" of the beater and extra wide mixing attachments. The count-up and down mixing timer lets you set your mixer to the desired mixing time and automatically stops when the time elapses or continues to count up. Perfect for the multi-tasker!


Chef Edward says that the real techniques to create a perfect frosting is
to have a good quality of ingredients plus proper temperature & mixing.


For the workshop, Chef Edward created 3 different pastries.
The Moist Choco Cake, Chocolate Mousse & Coffee Buttercream.

The Moist Choco Cake


INGREDIENTS:
Chocolate Mousse Frosting
150g Chocolate
2 Cups Whipping Cream

PROCEDURE:
1. Chop the chocolate and place it in a bowl. Using the Breville Multi Chef rice/cook function, add 1 cup water then place the bowl on top of the innerpot.
2. Melt over a slowly simmering until the temperature reaches approximately 45°C on a cooking thermometer. Using the Breville Scraper Mixer Pro, beat the cream until firm peaks cling to the whisk,
3. Whisking quickly, add about 1/3 of the whipped cream to the hot chocolate. Pour the mixture over the remaining cream and fold in gently with the whisk or a spatula to evenly blend the ingredients.

The Chocolate Mousse




INGREDIENTS:
2 cups sugar
1 tsp salt
1 & 3/4 all purpose flour
3/4 cup cocoa powder
2 eggs
1 cup milk
1 & 1/2 tsp baking soda
1 & 1/2 tsp baking powder
1 cup boiling water (From Breville Compact Kettle)
1/2 cup veg oil
2 tsp vanilla

PROCEDURE:
1. Preheat the Breville Smart Oven to 180°C using Bake Function. Grease and flour 8-inch pan.
2. Using the Breville Scraper Mixer Pro, lightly mix sugar, flour, cocoa, baking soda, powder & salt with the Scraper Beater.
3. Add the eggs,milk,oil and vanilla, beat for 2 minutes.
4. Slowly stir in boiling water to the batter to make it thin.
5. Pour batter evenly into prepared pans. Bake for 40-50 minutes.
6. Insert a toothpick and check if it comes out clean, to see if the cake has baked properly.
7. Set aside to cool.

The Coffee Buttercream


INGREDIENTS:
250g sugar
60g water
125g egg white
500g butter, cubed
2 tbsp, espresso powder

PROCEDURE:
1. Using the Breville Multi Chef, combine water and sugar then boil it for 5 minutes using the rice/steam function.
2. While your sugar is boiling, make a soft meringue using the Breville Scraper Mixer Pro and then add hot sugar syrup with coffee powder. One by one add the cubes of butter and mix in a high speed and wait until fluffy and stable consistency until ready to pipe.

I am really amazed with Breville products, imagine you just need to add
all the ingredients at the Scraper Mixer Pro then bake it at the Smart Oven & viola!
